Hello Carole,

How about this really traditional one?

Gazpacho (cold tomato soup) from Andalucía - Gazpacho Andaluz

Serves 4

2 or 3 slices of white bread
4 large tomatoes
1 small cucumber peeled
1 clove of garlic (finely chopped)
half a small onion
1 small red pepper
3 tablespoons of olive oil
2 tablespoons of white wine vinegar
salt and pepper to taste
water
ice cubes to serve

Pull the bread to pieces and soak in a cup of water.
Roughly chop the tomatoes, pepper, onion and cucumber. Place in a food processor and blend to a smooth paste.
Squeeze the bread to remove excess water, add the oil, vinegar and seasoning.
Blend for a second time, adding water little by little until you achieve the desired consistency.
Refrigerate until well chilled.
Serve in tall glasses with crushed ice.

Note: This is a popular Spanish summer starter.

ALBONDIGAS ANDALUZ - this dish has a North African flavour as do many Andalucian dishes from when this area was ruled by the Moors.

INGREDIENTS
12 Meatballs - cheat and buy ready made ones from your Butcher!
Large Red Pepper
Large Onion
Large glass of White Wine
Large teaspoon of Cinnamon
400g Tin of Tomato Sauce (Triturado) or Chopped Tomatoes
1-2 Large teaspoon of Paprika or Chilli depending on how hot your like your food
1/2 inch of fresh Ginger (grated) or 1 teaspoon powdered Ginger
Large teaspoon dried Mixed Herbs

METHOD
Slice the Onion into fine rings and the Pepper into 1/2 inch wide slices. Saute in Olive Oil for about 15 minutes over a low heat until the onions are soft and golden then transfer to an ovenproof casserole dish.
Very lightly brown the Meatballs in the same oil then add to the casserole.
Add the Tomatoes, Wine, Herbs, Cinnamon, Ginger and Paprika/Chilli
Stir gently and transfer to a low oven - 150-175 degrees C.
Cook for 2.5-3 hours stirring every half hour or so.
Serve with Rice.

FRITO MALLORQUIN

INGREDIENTS:-
Liver (cheaper the better)
Leeks
Red + Green Peppers
Potatoes (either fresh cut or you can use up some old pre-cooked ones - even old Chips work well)
Rosemary
Mixed Herbs
Paprika or Chilli Powder depending on your taste
Sherry
Olive Oil

METHOD:
Chop the Liver into small bite sized pieces. Brown in Olive Oil and put to one side.

Dice and fry the Peppers, Leeks and Potatoes until soft; if using pre-cooked Potatoes leave until the last minute.

Add the Liver, Rosemary, Herbs and Paprika or chilli Powder plus a generous slug of dry Sherry or Malaga Wine (Brandy also good),

Stir until thoroughly heated through and the Alcohol has reduced slightly then serve immediately.

A great Starter or a good main course with plenty of crusty baguette to soak up the liquid.

TORRIJAS

(Kind of fried bread).


- eggs
- Bread
- milk
- oil


1- in a deep plate put some milk and in onother the egg /stired with a fork)

dip the bread on the egg, then in the milk and then fry it in the pan.

Serve with orange juice sauce, sugar or syrope!!!
