Ireland - Food and Drink

Ireland is endowed with rich fertile soils, making it one of the best farming locations in the world. Irish farmers grow potatoes, wheat, barley, oats, cabbage, and many other crops. They also keep cattle, goats, and sheep. In addition, the seas that surround the country supply it with fish and seafood. All these foods provide the Irish with a vast source of ingredients for making excellent dishes and drinks. The Irish are well known for their tasty stews, bread, pies, and cakes. They also make very good dairy products such as butter and cheese. However, one thing that the Irish are most known for being good at is brewing beer and whiskey. The country is the producer of the famous Guinness, Jameson and Baileys drinks, among others.

National dish

Ireland’s national dish is the Irish stew. Its main ingredients include potatoes, bacon, and lamb. Some people use beef instead of lamb. Irish stew was introduced into the country two centuries ago. Initially, it was made of mutton or lamb, potatoes, and onions only, but as time progressed, more ingredients were added to the stew including carrots, turnips, and parsley. Mutton was replaced with lamb because mutton took so long to soften. The meal is prepared in a single pot and usually takes around two hours to prepare.


• 500g bacon
• 1500g lamb/beef chops
• 12 potatoes
• 4 large onions
• 6 carrots
• Fresh parsley
• Salt and pepper
• 3 cups of water

• Cut 6 potatoes into thin slices and the rest into halves.
• Cut the onions into thin slices.
• Slice the carrots into medium-sized pieces.
• Chop the bacon and lamb/beef into small pieces.
• Slice the parsley into thin and fine pieces.

• Arrange the ingredients in a clean pot in this order: sliced potatoes, • onions, carrots, bacon and finally lamb.
• Sprinkle salt and pepper over the mixture.
• Add water until it is slightly above the lamb.
• Place the half-cut potatoes on top and cover the pot.
• Let it simmer for around 2 hours over medium heat.
• Spread the parsley over the potatoes.
• Your Irish stew is ready to serve.

National drink

Ireland’s national drink is tea. The Irish are the second biggest consumers of tea in the world after the Turkish. Ttea is made with a lot of milk. One of the most popular types of tea in Ireland is Assam. Alcohol is also consumed heavily in the country, with the most famous alcoholic drinks being Guinness and Baileys.

Other recipes

Apart from Irish stew, Ireland boasts many other tasty dishes. Some are eaten on a daily basis while others are saved for special occasions such as Christmas and All Saints’ Day. The most common dishes are corned beef with cabbage, champ, and colcannon.

Corned Beef with Cabbage Recipe

• 2kg of corned beef
• 1 cabbage
• 4 large carrots
• 6 small onions
• Dry mustard
• Thyme
• Parsley
• Salt and pepper

• Cut the carrots into chunks.
• Slice the onions.
• Remove the two outer leaves of the cabbage and cut it into 6 parts.
• Put slices of the corned beef in a pot.
• Add onions,1 teaspoon of mustard, carrots, ¼ teaspoon of thyme and ¼ teaspoon of parsley. Sprinkle some salt and pepper.
• Put water into the pot.
• Heat until the water starts boiling, and then lower the heat, cover the pot and let the mixture simmer for about an hour and 45 minutes.
• Add the cabbage wedges to the mixture and let it cook until the meat and cabbage become soft enough. Sprinkle some salt and pepper again.
• Serve the beef with cabbage. You can sprinkle some oil on the meal.


• 8 potatoes
• Scallions
• 2 cups of fresh milk
• Butter
• Salt and pepper

• Scrub the potatoes.
• Chop the scallions.
• Place the scrubbed potatoes in a pot.
• Add water, heat the water to boil and let the potatoes cook until they can be pierced.
• Put the chopped scallions in a saucepan, add milk and heat until it boils.
• Let it simmer for a few minutes.
• Peel the boiled potatoes and mash them.
• Add the scallions and milk and mix with potatoes to get a fine molten mixture.
• Add some butter, sprinkle salt and pepper and beat the mixture well.
• The food is ready to serve.


Colcannon is a potato and cabbage/kale dish. It is usually eaten on Halloween. It is made almost the same way as champ. After mixing the potatoes with scallions and milk, heat the mixture and then add cabbage/kale and continue heating. The cabbage is cut into small pieces and cooked in boiling salty water. Once you finish mixing it with potatoes, scallions, and milk, cook for a few minutes over low heat and then serve with butter.

Typical meal times

Meal times are a little different from one family to another. However, most people in Ireland take their meals within certain hours.

• Breakfast: 9 a.m. – 10 a.m.
• Lunch: noon (12 p.m.) – 2 p.m.
• Dinner: 6 p.m. – 9 p.m.
• Some people also have afternoon tea accompanied by some snacks at around 4 p.m.

Many people in Ireland focus on having healthy meals. They love using natural ingredients and spices instead of commercially produced spices with lots of added chemicals.

Most people in Ireland prefer preparing their own meals at home because there are various recipes for cooking Irish meals, and what you eat in hotels and restaurants may not meet your expectations.

When it comes to drinking, Irish citizens are known to drink a lot of tea and alcohol. Tea is usually consumed during breakfast and sometimes in the afternoon or after dinner. Many people drink alcohol after work.
